I'll try to describe the way I shot my recent street uploads taken at an open market. Maybe some will find this information useful.

First, I adjust my camera, so no further adjustments will be in need while photoshooting. This is very essential, because if people see you fiddling with your camera they become cautious and tent to avoid you. The secret is to never look at your camera! You have NO camera with you! Make your camera invisible! I use a black Nikon with a plain black strap with no fancy yellow nikon logos on it and when I hang it around my neck I wear dark clothes.
As for the adjustments: I use a Nikkor 28mm f2.8 prime which makes for a superb 42mm lens. Mode set to aperture priotity, manual focus set to
hyperfocal distance, ISO to 200, battery full, card empty, camera hanging from the neck and off we go!

Walking along the street, my right hand rests on the camera with my thumb (not the index finger) on the shutter release button and the rest four fingers under the camera's body. I keep my left arm away from the camera, either inside my pocket or simply hanging. My eyes look straight, never at the camera. Wandering around, mixing among people, I become one of them, sometimes asking them for information, sometimes commenting on their products.

All that time, I become observant waiting for the scene that will catch my eye. Then I stop and shoot, or even shoot while walking if light allows me to use a high speed. I try to aim at my target as if the lens is a gun. Sometimes at the very moment of the click I turn my head to the left or to the right as if someone calls my name. This way, my target becomes totally unaware that I'm shooting him. I don't even look at him! (but my lens does!)

A couple more ideas could be to set your shooting mode to "burst" - then you'd have a selection of exposures to choose from; and keep both hands in your pockets and shoot using a remote. I don't know if it'd work but could be fun

It can't rain all the time... but in Cornwall it'll have a bloody good go!
